Fired up my first WSM this weekend. After years of grilling (which still has it's uses), I've finally learned about smoking, or at least am starting to. One night of ribs and one night of whole roasted chicken down, more to come.
Will take an suggestions, especially on keeping ribs moist and succulent.
Looking for an authentic Italian porchetta recipe, (so that ends up almost like pulled pork).
