Hello all,

Stumbled upon this great site a few weeks ago, have been reading and digesting all that I can. I've always wanted to learn to do real, low and slow BBQ but have just recently decided to take the plunge. In fact, I'm in the middle of my my first brisket as we speak. I'm cutting my chops on smaller, trimmed packer cuts on my Weber kettle (Minion, water pan) before I get my WSM which I plan to in next couple months or so. Very informative, on-point discussion here and I look forward to contributing something someday. Thanks y'all!
