So, I'm still working graveyard shift. On my off "days", I have to keep the noise down so as to avoid disturbing my neighbors. I've exhausted my Xbox appetite, so what else is there to do? Smoke something.
I happened across Chris' article Quick Pastrami and found some corned beef. Last night, I fired up the bullet and cooked up a 5 pound piece of brisket pastrami style. Mind you, to my knowledge, I had never had pastrami before. My PBS station broadcast Sandwiches That You Will Like for the 4th of July, and I was intrigued by the Katz' New York Deli segment which highlighted their pastrami sandwich. This is what a Katz pastrami sandwich looks like.

Trust me, after a few too many weeks of overnight Wendy's, Jacks, et all, THIS looked pretty damn tasty. I HAD to know if I could reproduce it.
Well. I can only say that I am beyond pleased by the results. Tonight I rushed to the store to buy some deli rye bread and swiss cheese. My sandwich wasn't as large as Katz', but it was delicious. Preparation and cooking was extremely easy. I give this recipe 2 thumbs up.
