Hey everybody, I just got word that my brand spanking new WSM will be here on Tuesday! I just happen to turn 21 on Saturday so my roommate and I are going to smoke some ribs and a couple of pork butts.
My question is this, what are your favorite things to add to the pork when you pull it? I've heard of some vinegar based sauces and a couple other things, what else is there?
It'll be nice to sit back and let the WSM do its thing while we drink some beer and listen to some Tower of Power.
 
I use a finishing sauce, vinegar-based, that includes Dijon and a little sweetness. Not much--a T or two per cup/cup-and-a-half--just enough to carry and blend flavors and to somewhat even the moisture levels. I serve more of this sauce plus any others on the side.

Many don't mix anythng in; some add a little rub--with or without a litte vinegar and/or apple juice.

Use a Carolina (Lexington) style vinegar & ketchup based sauce. Some people apply it LIGHTLY to the pork while others dip it. Great either way.
