Well I kinda inroduced myself on that last "Newbie" post. Actually I was just tryin' to figure out how to send a post. But I am a "newbie".

Anyhow, planning on doing a 11# free range goose for Thanksgiving. Will be brined for a couple of days and smoked on the lower rack. On the top rack will go a bone-in (pre-injected) whole turkey breat. Will be using sand in pan. Plan on kicking up heat to 275 - 300. Question is - approximate timing to get these two birds to be done together.
