Good day for a smoke

I put on a butt this morning at 10am. It was a 6-7 pounder, which I cut into two. One piece is smaller than the other. I got a late start (a few too many drinks last night), so I'm testing to see how a smaller piece of butt does. I'll be throwing on some ribs later in the day, so if the butts aren't ready in time for dinner, I'll keep them going and eat them tomorro for lunch.

I'm supposed to be studying for some work-related exam, but the WSM just keeps crying for attention.
 
Forgot to mention, this is my first time smoking since taking some times from a few folks on this board about maintaining higher temps. So far, so good. I filled the charcoal ring with maple leaf briquettes and topped off with a chimney of maple leaf lump.

And empty water pan, double foil. So far, so good, probably a little high temp, even with two vents closed and one only slightly ajar.

Today's for experimenting, though. higher temp butts. We'll see what happens. It might not be perfect, but definitely edible.
 
G,I've had a butt on since 6 AM. It's at 170* now,with aprojected eating time of 6:30 PM. Love the WSM. Ron Popeil ain't got nothing on set it and forget it like the WSN.

The larger piece I put on is holding pretty steady at 180. A couple more hours should do it.

This is my first attempt. I pulled a bit at the corners and 'accidentally' took off a sample. Man o man, it's gonna be a good summer.

Threw on a couple baby backs an hour ago. Along with some jerk chicken thighs. The capacity on this thing is amazing. chicken's for tomorrow's dinner. I'll have leftover BBQ.

My guests should be happy.
 
Mine came off right on schedule. So tender,it almost fell off the fork!! Yep,I agree,it's gonna be a great summer!
