Gingery Banana Waffles

Haven't looked in this book in years. Glad I did today. Found what sounds like something real good for breakfast this week-end.

Gingery Banana Waffles

3 cups all-purpose flour
4 tsp. baking powder
2 tsp. ground cinnamon
1 1/2 tsp. ground ginger
1 tsp. salt
4 eggs
2/3 cup packed brown sugar
2 extra-ripe, medium-size bananas
1 1/4 cups milk
1/2 cup molasses
1/2 cup butter
4 firm, medium-size bananas, sliced
Maple syrup

1. Preheat waffle iron. In a large bowl, combine flour, baking powder, cinnamon, ginger and salt. In a smaller bowl, beat eggs with brown sugar until light and fluffy. Puree extra-ripe bananas in blender (cup). Beat pureed banana, milk, molasses and melted butter into egg mixture; add to dry ingredients. Stir until just moistened.
2. To make each waffle, bake 3/4 cup batter in waffle iron until golden brown. Serve with sliced bananas and syrup. Serves 8
