Doing a minion method pork butt, two hours into the smoke. The pork butt is getting a greenish tint one side. Anyone else had this happen or know why?

TY!

Never had my WSM open at the 2 hour mark. However, I imagine you're on the way to "bark" and it's nothing to worry about.

Did you notice any blue ink on the butt before you rubbed it? If you put mustard on the butt and it mixed with blue ink you would have green. That's about the only way I could explain it.

It's amazing what one sometimes remembers when some days one can't remember <STRIKE>her</STRIKE> one's own name! Here's something that touches on the green meat:

There was a thread started by the infamous Greg Rempe back on December 30, 2004 entitled "Green Butt", that started out with:

I pulled out my 7lb frozen butt to thaw for the next few days and noticed a number of green spots on it. What the hey now?? Is it bad, mold, aliens???

It quickly went down hill and ended up being deleted all together but I was able to save much of it before hand. Anyone else remember it?

*was not peeking* I had to start the cook during a down poor this morning so the internal heat gauge was added after the rain stopped. The green is now a nice brown so I'm not going to worry about it.

Take care.
