Just a friendly reminder if your doing the turkey carcass stock.
I used my meat cleaver and chunked mine up in the 8 qt instant-pot.
A little celery , onion and carrots.
 
Brown all those goodies well before adding the water. It really adds a lot of color and depth of flavor to the stock.
