I've tried sous vide, reverse sear, and other ways to cook a steak on a charcoal or gas grill.
For the last year or so, I've settled on Grill Grates on the Genesis to produce a good crust and quick, consistent results.
Bought these choice ribeyes at Sam's Club. Patted dry and salted a couple hours ahead of cook time. Added fresh-cracked black pepper just before the cook.
Fired the Genesis with Grill Grates. Set the two left-side burners and the sear burner to just past medium (to heat the flat-top Grates). Put the right burner on low as it goes.
Preheated the grill, and wiped the flat side with a little grapeseed oil on a paper towel. Two minutes per side got a decent crust started. I let them go another minute on each side, then held them on edge for a few seconds to sear that too.
After they developed good browning, moved them to the cool side, lowered the heat a bit on the hot side, and closed the lid.
Checked temp every minute or two until they hit 125 when off the grill. (I get false reads when the meat is on the grill.)
