Garlic in BBQ Sauces? (For example 'No. 5')


 
There are very few Q sauces where I don't include garlic. In most cases it gets minced, added to the pot when the onions are as sauteed as I'd like, and allowed to cook just till very fragrant (usually 45-60 secs) and not till browned, at which point the pot is deglazed and/or liquid(s) added. If I want a smoother sauce then, later, I'll use a blender or force through a sieve.
