fried cat fish


 
I use a combination of 2 cups corn meal, 1 cup corn flour (commercial fish fry like Zatarains), and a half cup corn starch. You can season it with salt , black pepper, lemon pepper, garlic powder, and cayenne, how ever you like. This is also a good blend for frying oysters. If you fry whole fillets don't fry too hot so the exterior gets crispy brown before the fish is done.
 
Thanks for your suggestions. I'll be giving it a try on July 4th. Have 15# of nuggets to fry and then will be cooking 15# of fillets....blacked. Two briskets and two pork shoulders. Should be fun.
 
Good God man, you need some of us to eat it all! Nothing better than fried catfish than fried okra. Oh and boiled crawdads corn tatters etc.
