Can fresh cut wood be used to smoke verses seasoned wood? I have access to some fresh cut apple wood and was thinking about using it this weekend, bad idea?

I also purchased a new WSM, but do not have it yet. Do the new units come with a temp gauge?

thanks so much...

Mark,

Fresh cut wood has a lot of creosote (I'm sure I'm spelling that wrong), which, among other things can impart a bitter taste.
Stack it and save it for next year...

Ideally 6 monthes down up to 2 years is the best.
I have used fresh apple and cheery and had no problems but I did use much at one time.

No, WSM's don't come with a temp gauge. Drop a turkey fryer thermometer down the top vent, and pick up a couple of digital thermometers like Polders or, even better, a Maverick ET-73. The ET-73 has two probes on it, one for the smoker and one for the meat. A great toy!
