French Onion Casserole

A side dish my family and I enjoy alot... Hope you do too!

French Onion Casserole

3 medium sweet onions
2 T butter
8 oz. fresh mushrooms sliced
2 cups shredded swiss cheese
1 10-3/4 oz. can condensed cream of mushroom soup
1 5 oz. can evaporated milk
2 t soy sauce
1/2" thick slices of a crusty bread
1/4 cup finely chopped parsley
salt
pepper

Preheat oven to 375*F.

Slice onions and cut each slice in half. Melt butter in a large saute pan over medium to high heat. Cook onions and mushrooms, stirring until tender. Season with salt and pepper to taste. Spoon the mixture into a greased 2 qt. baking dish. Sprinkle with one cup of the swiss cheese.

In a bowl combine the soup, milk, and soy sauce and mix. Pour over the cheese, onion, and mushrooms. Cover the top of the casserole with bread slices lightly pressing into the mixture. Sprinkle with the remaining cheese, and with the parsley.

Cover and refrigerate for a minimum of 4 hours.

Remove and let stand at room temp. for 30 mins. Bake covered for 30 mins. then uncover and cook for 15-20 mins or until the top is browned and the casserole is heated thru.
