I plan on purchasing 4 tri tip roasts (on sale at Vons $1.99) sealing them individually with different marinades and freezing them untill needed.Do you think this is a good idea? Do I need to let them sit for awhile before I freeze them to allow the marinade to penetrate?
Thanks every one,
Dan

Are you using a Foodsaver canister? Just wondering. On my Compac II the juices suck
out of the bag pretty quick. Anyway, they say on TV that the (dry rub) sheets they sell work in about 45 mins so I would think if you are fully vaccuming in a canister it would marinate before freezing takes place. But you wouldn't freeze in a Vaccum container anyway. If you are just sealing the marinade in the bag with no vaccuum, I would allow the normal marinating time before freezing.
