Whenever I am at the mall I am tend to stop by the food court for a bite to eat. One of my favorite places is a chicken teriyaki stall where they serve delicious teriyaki chicken right off the hot griddle. After some internet research I found, came up with this recipe.
First trim about 5lbs of chicken thighs and cut into bite size pieces. Dump chicken into a kitchenaid mixer with a dough hook and add:
1 C Water
1/8 C Cooking Sherry
3/4 tsp granulated garlic
1 1/4 tsp white pepper
1/4 C Kikkoman Low Sodium Soy Sauce
1/4 C Veg. Oil
Next turn mixer on low speed for 40 minutes. The chicken will turn into a sloppy mess but this is good. Put chicken mixture in fridge over night.

The following day make the teriyaki sauce.
2 1/2 C Low Sodium Chicken Stock
3/4 C + 2 T Kikkoman Teriyaki Sauce
1/4 C + 2 T Low Sodium Soy Sauce
1 Clove Garlic
1 Thin Slice Ginger Root
1/2 C brown sugar
Pour all the sauce ingredients into a pot and heat on low for fifteen minutes. Remove the ginger and garlic. Using a corn starch slurry thicken sauce untill it coats a spoon.

Cook chicken in a cast iron pan or griddle untill browned on both sides Add a few spoonfulls of teriyaki sauce after the chicken has browned and cook untill a nice glaze has formed on chicken.
