Flap meat from spares - DELICIOUS!!

Anyone else a fan of flap meat trimmings from spares? Cooked the flaps from two racks in an aluminum pan after applying rub.

Pulled after 4 hours and gobbled all of it. Needed to pull some away from a membrane or two, but the flavor and texture was great.
