Flank steak taco night

Nice amount of fat in this flank. Marinated with olive oil, water, tequila, worcestershire, garlic clove, cumin, fresh squeezed limes, salt and pepper. Vac packed it for about 6 hours. Cooked over 500 degrees for a minute or so per side then offset for a few. Measured 125 on the insta and then let it rest for 10 or so.....fresh made guacamole. Cilantro crema and chips.....this steak was out of this world. Fried veg to fill out that fried taco shell.........I would say cooked perfect.....the left overs made a fabulous Sammy today at work.

A sneak peak at tonight’s feast...the wife’s specialty. She likes to keep it lean often....she says it’s made with love and mango. She whipped up more guacamole....have to use the avacodos up and it goes with the dish too...maybe final pic!

Ground chicken, jalapeño, onion, mango, hot peppers, panko, garlic, worc.....sauce, salt, pepper, then grill of course.

Do you play that old Marantz while you are grilling?
 
It’s my primary music setup, I use it with a Marantz 6100 turntable, and yes it is on pretty much anytime I am grilling.

It's a version of a item sold at "Moe's Southwest Grill" called "Close Talker Salad". It was in my Food Network mag. back in 2012. Anyone ever hear of this place?

Moe’s is the worst offender of Gringo Mexican food. Once was enough for me to eat there.
