Flameboss

So I got my Flameboss last weekend threw a rack of St Louis on them but did not take any pics. I decide to do some more testing today with a rack of spares. I screwed up at the beginning by clipping the pit probe underneath my ribs. I realize it after a half hour web UI was at 250 but dome was at 300. I went to take a peak and I knew the temp was way higher than 250 so I move the probe to a space on top and dropped temp to 225. O'Well we live and we learn...hopefully not ruined we will see and 2 to 3 hours.

Thanks guys... spares turned out awesome even with the brief overshoot maybe a little to done (soft) but wife likes that.. not me. My 18" WSM likes 250 (no water just foiled bowl) with only one lower vent open so trying to force it to 225 with the AT controller required me to adjust the dome vent which I really don't like to do. So i let it ride at 250 and the fan never had to come on but it is sure nice to be able to go to any web browser, anywhere and see what my WSM is doing. After foil I tried to pull a rib and I came out with a clean bone which I set on top.
