Hey guys!!!!! I used my new WSM that I purchased from Amazon for the first time Sat. afternoon doing baby back ribs and was really pleased with the results!!! That thing can sure hold a temperature!!! I ran them at about 225 for 3 hours and then turned them over in the rib rack and opened the vents a little to raise the temp to 275 amd gave them another hour and then tried the tear test. I had used the BRITU rub recipe but of course I made some changes. I think that next time I do ribs, I will use a vinegar mop at the 3 hour mark. Any thoughts on this?????
