First turkey!

Hello all! I will attempt my first (practice) turkey tomorrow. I have it in ther apple brine. I failed to read the small print on the recipe and added all ingredients and boiled together for a minute or two...I plan to smoke this 13 lb turkey with 2 small chunks of applewood. I have the 22.5 WSM. Would 2 full lit chimneys be enough for a 325 cook? How long should it take for a 13lb bird @ 325? thanks!
 
Well i have only done 1 turkey on the wsm with the apple brine and you can read about it HERE

2 full lit would be good,as for the smoke 2 small chunks of apple will be ok...I used 2 fist sized and it was a bit to smokey.(for my taste)

And my bird was done under the 3h mark.

I did my first practice turkey (13 lbs) in my WSM last weekend and yes two chimneys is enough for a 325 cook. I even managed to get up to 350. I lit one and poured it in the cooker then poured a full unlit on top and wood chunks on top of that. I took the bird off only 2 1/2 hours later. The breast was at 165 and the thighs at 175. Let it rest for an hour then dug in...1st turkey

Agree with that advice, so your approach sounds right to me. Only thing I will add is be ready to put some foil on parts that might be getting too dark before you hit your target internal temp. You're gonna love it!
