First Turkey on Christmas

My wife gave me a WSM for Christmas (actually, a few days prior) and I decided to try and smoke our turkey. I used the brine as published on this site (apple juice, oranges, ginger, etc) and started it in the oven at 350 for 2 hrs. I moved it to the smoker for 4 hours at a constant 240 and it came out AWESOME. Super juicy with lots of flavor. I smoked it with hicory chips and used kingsford charcoal. The bird was 19 lbs.

Thanks for this site....it was a huge help!

I am going to try an 8 lb beef brisket and 3 slabs of ribs on New Years Day!

Welcome to the site and the beginning of your new addiction. There's a huge volume of info here, offered by some great people who all suffer the same affliction. (a compulsion to smoke the next piece of meat)
