What’s up Chuck? Was meaning to tell you I had been using peri peri as a marinade on chicken but I was looking for a little something extra on my breakfast stuff like eggs or these frittatas the wife gets from Costco. I have been loving TJ’s peri peri just as a sauce lately. Forgot how good that stuff is.
 
Need to pickle some onions like Bret said you need to break up that fat with some thing.

Pickle some Korean Radish (if you can find some) or substitute some daikon if you can't get the radish....the crunch/pickle goes amazing with fatty meat! I add sriracha as well to the pickling liquid too! Something like this...

That radish with KFC, Korean fried chicken. Oh my god. Beyond delicious.
