First Tritip

I've had bad experiences with tritip in the past. Not making them, but eating them -- tough, chewy and devoid of taste so I never attempted making one. After reading all the posts here I decided to try one. Picked up a pair at Costco, cut them both in half at the split. Cooked on the grill to a bit more medium on the medium rare side then I would have preferred, it was a big hit.

I've now found a new and great piece of beef that will now be a regular around this house.

I used my everyday cook everything with it concoction: put the meat on a platter and pour a generous amount of light, not lite, soy sauce on followed with about 1 tbs dark sesame oil. Follow with generous dousing of kosher salt, pepper, onion & garlic powder then smother with paprika. Let this sit while the grill heats up.

I used the finger poke method to test for doneness but since I never grilled anything this large I was thrown off a bit. Fortunately, I gave it a stab with the instant read. Came back at about 130 so I pulled it off for a rest. Got worried when there was no blood in the juices but it the flavor was fantastic.

Welcome to the site! I totally agree with you - I was not familiar with tri-tips until I read about them on this site, and now they are my go-to for beef. This is an outstanding site and there is always something else to learn.

tri-tips are one of my favorites to smoke. Quick, easy and ALWAYS come out delicious.
