I just realized that I have never made spares on the WSM before. I have 4 racks and here is what I plan to do.
1. Smoke coiled @ 225 - 250(at top grate) for 4 - 5 hours
2. Uncoil and foil for about 45 minutes
3. Unfoil and sauce and throw them back on for about 15 minutes.
Is this enough time or should I start sooner? I want the ribs to be tender but not exactly falling off of the bone. I like a little tug.
