first time with ribs

Hi all,'
I am in the beginning stage of the ribs, should the vents be opened or closed?????? thanks
 
If you used a minion start I would leave the vents open until I hit 225 as a lid temperature. Then close about three quarters and watch until it stabilizes. I personally would aim for 250 as a lid temp. It's a lot easier to catch the temp on the way up then bring it down. Also leave the top vent wide open for the whole cook if possible. I would also put the ribs and smoke wood on as soon as I got the unit assembled not waiting until I hit temp. Hope this helps.

You leave the top vent open, and use the bottom vents to control your temperature. Cook between 200-250º. A thermometer definitely helps. A cheap digital thermometer can be used by just laying the cable under the lid and stick the probe through something. A potato will work. Just make sure the last half inch of the tip is exposed and not touching anything.
