Yea they can be touchy, Jim. Anyhow thanks for the compliment, much appreciated. It's the little things these Old World types learn and are handed down with in the kitchen that may seem like nothing to a casual observer but end up dramatically affecting the taste. I especially see it with the sauces, gravies and the timing of seasonings. I would say why do you do that now, and she would say thats when it has to be done now go find something to do!
