First time smoke with a ? about Chix and Ribs the BRITU

Hello,

I just received my WSM and it's all setup and ready to go. (Pretty excited, I've grilled a bunch but never BBQ).

The questions I have:
Do you marinate the Ribs, I do not see that for the BRITU recipe.

I plan on smoking 3 rack ribs (baby back) and 2 chickens, butterflied.

Is the correct position chicken on bottom rack and Ribs (rolled) on top rack?

Also, Should I start the ribs off an hour or 2 first...and if I do since the chicken is placed on later, do they loose any smoke flavor since the wood was burning already for 2 hours?

HI Pete--

Most of us do not marinate ribs, but you certainly can. I have, but I usually just go with a rub.

Yes, chicken on the bottom.

If you're doing b-backs you can start them at the same time. If you're doing spares you could start the chicken later. You can add smokewood at that time if you need to.
