First Time Bird Smoked.....

Did my first bird today. It came out great. Rubbed a little olive oil and John Willingham's poultry rub, smoked with Hickory wood. Was not dry at all, and the wife loved it.

Will try a brine tomorrow. I think I'm hooked.....

Sounds good Emery. Did you go with or without water pan. What temps. How long did it take? Was the turkey self basting or not processed? Enquiering minds want to know /infopop/emoticons/icon_biggrin.gif I am anxious to get to cooking myself but won't get a day off till thanksgiving. Going to have to try to get a cook in between work. Going to do a whole city ham honey glazed for the big day. Or wiskey mustard.
 
Did not use a water pan, Temps started a little high (aprox 390) but I dropped them to about 320 and it went for 1 hr. 45 min.. The chicken was a Perdue Roaster.. don't know if that's self basting or not, but she was juicy..

I got her sister soaking in a honey brine right now....
