First spares

Doing my first spares this weekend. Do they have to be trimmed or can they just be removed from cryovac, rubbed, and plopped on the smoker?

There?s no need to trim any meat off the ribs if they fir into the WSM, but its suggested to remove the membrane from the back.

I think you'll find tht spares cook more evenly when they're trimmed. I'd suggest at least removing the breast bone and skirt meat. Throw them in the smoker while you're cooking the ribs. They'll be done in a few hours and make a nice mid-cook snack!
