Decided I should take advantage of turkey sales and tried smoking one this morning, turned out great and was quite simple. I used the basic brine recipe on the site and just a basic evoo and salt and pepper rub. My wireless thermometer worked great to get the breast right to 165 (double checked with another, just to be sure). Total time was just under three hours, and temp was around 300 for most of the cook, this was a smaller turkey.
To anyone that hasnt tried this, give it a go, it is excellent! I got over a cup and a half of drippings, tons of moist turkey, and soup in the crock pot right now.
