First smoke

Did the first smoke on my new WSM last weekend. Held temperature as well or better than my gas smoker (which is crazy). I can tell I'm going to love it. I used a 12.75 in. flower pot base in the water pan I bought at Lowe's. Cooked 3 racks of baby back ribs which I overcooked slightly. I tried to cook them at 275 for 4 hours instead of the usual 225-250 that I would normally cook ribs at. I heard Harry Soo say that he cooked ribs at 275. When mine turned out a little dry I got on his website and found out that he also foils them after about 2 hours. Oops. Guess I should have read his recipe before cooking.
 
Congrats on ur 1st smoke Russell, i also cook my bb ribs at 275 find that temp to be perfect for any smoking, also i foil my ribs at the 2hr mark for 1 hr then back on the smoker for about 30 mins to revive the bark, i hear people cooking bb for 5, 6 hrs or so why it takes so have no idea, anyway congrats again
