Nice looking spares ya got there, that's something I haven't cooked yet, I need to do something about that. Have my 1st wsm cook goin on as I post this, bb's and chicken, hope it looks as good as yours.

Matt, I really like the color in the middle section of the rack. I guess that the heat got a little hot on the ends. Foil is your friend.

Glad you shared with us. Good cook!

Thanks everybody. Mark, you were spot on, the ribs were great but the edge of the narrow end of one rack got real dried. Should i foil the ends throughout the whole cook if im laying them flat or foil them after some period of time?

I may also not have been particularly careful when placing the ribs on the grate, I think I let them a little to far over the water pan, when they really didnt have to be.(i have the 22WSM)

Yep, you can foil the ends, hump the ribs up a bit in the middle to keep the ends closer to center.
You can cut bigger racks in half to facilitate rotation.
I like to roll them, so I can cook a couple of racks without using the second grate.

Definitley nice looking cook.

Congratulations, Matt. Those ribs look very tasty!! The first of many many more, I'm sure. Welcome to the site!
