I did my first smoke of beer can chicken this weekend. Temp stayed steady at 244. The chicken turned out beautifully. I filled ring half way with K comp and put 25 in charcoal starter. Add three chunks of apple wood. My question is the wood did not completely burn. Did I not put enough in charcoal starter to burn evenly?

It may be more of a matter of PLACEMENT of the wood chunks.

In the case of poultry (where you're probably wanting to use a bit less wood than you would with other meats) I normally partially "burry" the wood chunks near the center of the unlit coals in the charcoal ring. Create a bit of a "dimple" in the area near the wood, and then dump the lit in there. When cooking Poultry I also let the charcoal ring get heated-up pretty good before assembling the smoker (I "let it go for a while" after dumping-in the lit.) This way, the wood comes into contact pretty effectively with the lit.

I'm glad to hear that your smoker's maiden voyage worked out nicely for you. Keep it up, have fun, and enjoy!
