My first rib cook on my WSM was a sucess today. Father-in law loved them. They were very good(patting myself on the back) but I dont know why they tasted like polish sausage! I used Head Country rub and 2 chunks of applewood and 1 tiny chunk of hickory. Smoke was not overpowering, but they did taste alot like polish sausage. They were so tender it was amazing!! WSM does it again. Any suggestions on changing the flavor from the "sausage" syndrome. /infopop/emoticons/icon_confused.gif
