First pork butts on my 22.5 WSM. Real tough conditions in North West Jersey Saturday night. 11 degrees and the wind picked up overnight. 14.5 hours and because of the conditions I never turned or opened the smoker. At 14.5 I check internal temp and 190 right on the nose!
Congrats on your new WSM. The butts look great. I guess if you can cook them like that in tough conditions, you have a lot of great barbecue in your future.
