Hello Good People!
Just finished my first pork butt! 10lb Pork Butt (Bone-In) with fat cap on. Used the Mr. Brown Recipe. Start time was 11:50pm. I anticipated a 12hr cook but was quickly reminded that you can not cook to time...it's done, when it's done! Temp. on the smoker was running hot for most of the night. Checked it around 2am and it was @ 265 at the grate...fell asleep and woke back up around 4:30am and the temp. was at 253. Decided to quit thinking about it and crashed 'til 8am. Checked the temp at 8am and it was still at 250ish...so I decided to turn/baste/check temp of meat. Temp on meat was already at 180 degrees. Let it go so the baste could dry up and the meat temp could get to 190-200. Re-checked meat at 9:30 and it was ready...looked awesome! Currently, I have it wrapped in foil/towels in my cooler. Decided to throw some boiling hot water into cooler before placing meat in it so the cooler would hold temp until 5:30 this evening. I'll let you know how it tastes! This has been a great resource for me and I thank everybody for sharing their wisdom! `Peace
