First Pizza on Performer


 
The pizzas turned out very good. My wife made a Greek style with chopped tomato, green onion, garlic and oil as the base and topped it with chunks of feta, kalamata olives and mozzarella and I made just sausage, red onion and roasted red pepper. Unfortunately, my camera isn't working so no pictures this time but maybe next time.

I think the setup I used was really good but I struggled to get the temp past 425 degrees.Do you think that firebricks would be better than cast iron?

This morning I threw on an 8 lb brisket on my WSM. I had a lot of charcoal left from last night so I used that and only had to use a little fresh. Maybe I could borrow my neighbor's camera to get some pics of the cook today. Hopefully my brisket will turn out as good as my previous ones. With the brisket I am doing some of the famous Wolgast scored yukon gold potatoes. When the brisket is done I probab;y will still have some coals left so I will do a couple of fatties and for some reason I have a taste for some Spam.
