First Overnite Cook

My plan was to put the butts on last nite and brisket this morning. things didn't necessarily work out as planned. Once I got the temperature steady around 240, I decided to go to sleep. Being my first overnite cook, I kept waking up to check temps (I don't have a wireless thermo for the grate temp yet). Finally, around 2:00, I said trust the equipment and just let it go. Around 3:30, a big storm came through and it woke me up. I went down to check the WSM and noticed that the side door had come off and the temp had spiked to 300. Not sure for how long. I got the temp back down but these seem to be cooking really fast due to the temp spike. They are now around 185 after 6 1/2 hours and total 9 pounds.

Do you all still think I am okay or will we be eating hamburgers tonight.

Oh, also, I just put the brisket flat on (around 6 pounds) thnking it will come off around 2pm.

Hope this works.

I think they'll be fine. Unless the grate area hits 350+ (the point sugar burns), butts can take higher temps. I have often cooked butts at 300 lid.

Good luck with the brisket!
