First overnight Phil-b-q of the year

The missus and I have been hankering for some PP,so we are doing the first one of the year tomorrow. I put two 6 lb butts on about an hour ago. They are holding steady at 225*. Gonna check 'em at first light,then serve them about 2. I 'll have some pics later.

7 AM,butts holding steady at 180*,WSM at 225*. Looks great,smells better!

Yes, that smell in the morning sure is captivating. How's the weather down there? I've got a hankering myself. I'll have to be satisfied with grilling up some country style ribs later. Enjoy.

Phil I put on a 10 lb butt last nite at 9 was 240 at 12 and was 225 at 6 this morn, used mm and lump w/4 chunks of hickory

I have found steadier temps on night cooks because the sun seems to really cause my temps to spike 25-40 degrees, not sure if this is common.

I used the foiled clay setup for the first time yesterday, first on some baby backs then the butt thats on now. I don't think I will use water again or briq's again.

Gonna serve at 1 with some bush's grilling beans that have left over pp and other goodies mixed in, puttin them on the WSM at 10.

I checked the WSM at 10,and the temps were starting to drop. I tapped the legs to knock some of the ash off. I checked a little bit later and the temps still hadn't come back up ,so I added some more charcoal and lit about 6 briqs in the chimney. It's cruising back at 225*. I also put a pan of baked beans on the lower rack. Got to get going on the mac salad in just a few. We're eating at 2.
Dave,the weather is sunny and about 50*. There is a light wind blowing,so when the missus' co-workers get here,I'm probably gonna light the chimenea to try and take the chill off. Last weekend would have been better. Sunny and 65*! Let spring get here already! I'm tired of the cold.
