First major smoke of the season

It has finally stopped snowing here in Montana, just in time for the first major smoke of 2011. I've got 32lbs of pork butts in Smoker #1 cooking away since 2AM and 12 lbs of chicken ready for the new Smoker #2 for this morning. The dinner is set for 6PM this evening with lots of leftovers to vacuum pack and freeze for the upcoming camping season.

A great thanks to all of you WSM smokers out there on this site that inspired me to get Smoker #2 for my birthday this year. After two seasons of smoking on Smoker #1, I almost know what I am doing this year!

Oh there will be pics! I especially like taking shots of ignition at 2AM with burning coals in the dark on the grill patio. It is amazing how perfectly still it has been here for the first eight hours of the smoke. Not the slightest breeze here at the eastern foot of the Continental Divide, very odd for early spring.

Smoker #1 is holding an amazingly level temp at 240 degrees F on two chimneys of regular Kingsford as a result of no wind. Time to light up Smoker #2 with the chicken!
 
What a quick smoke for the 32lbs of pork butts! 10 hours at around 240 degrees F and all of the butts were between 180-190 degrees F for internal temps. Now they are all wrapped and sitting in the warming oven waiting for the chicken to be done on Smoker #2 and the guests to arrive. Last summer, it took 14 hours for 29.5 lbs of pork. Don't know why it went four hours faster...
