First cooks this last weekend

Friday I use the perfect chicken skin recipe for my my first cook and have to say that it was the best chicken I have tried. My wife thought it was too smokey but the kids devoured it. My only regret is that I didn't make more than one.

Saturday tried some spare ribs. Used a variation of the BRITU recipe (my rub and No. 5 sauce). After 4 hours I was worried as the ribs had a heavy bark and they looked to me as if they were dry and tough. I reverted back to the foil crutch and foiled them for another 1.5 hours. They came out too done, pretty much falling off the bone. My wife loved them whereas I wasn't too impressed. Not enough smoke for me (that is why she loved them). They were good but didn't have any wow factor for sure.

Sunday took it pretty easy and made some chicken legs and thick cut pork chops. Both were very good.

In all, I am very pleased with the WSM. Still figuring out the temp. comtrols but I am amased at how well it maintains it's temp.

I have to try some brisket. This stuff is addictive!
 
Cory, welcome to the group. Sounds like you are jumping right in. Where did you find the perfect chicken skin recipe?

The smoke flavor thing is pretty subjective. A little smoke goes a long way with some foods.

Keep up the good work and post some pics of your cooks, we need proof that it REALLY happened.
