Rather accidentally I got my first results from my new WSM. I just intended to do a dry run to learn the best ways to run the vents. But after a little pressure from the wife and some great prices on ribs on Sunday i started cooking.

Had a few issues with the temps as it was a little blowy out. But after fashioning a rudimentary wind break things settled down.

Marcus, welcome to the forum. Those ribs look delicous. 1st time I've seen an enclosed ash catcher on the WSM. Where have I been? Glad you decided to throw some meat on the Barby! Hate to waste fuel.

No, I have the heat deflector on mine, it's the round shield on top of the heat deflector and just under the lower section of the smoker I was refering to. Maybe I'm seeing things, it ain't 5PM yet.
