Well I finally got my WSM and fired it up. Did a couple racks of BRITU ribs a big chicken and some of the apples stuffed with candy bars. I must say that the tips given here all worked perfectly thanks everyone.

Things I learned: Those apples get mushy after too long on the cooker, and the WSM is great!!!

I have a few more questions and what not but i will put those in seperate posts.
