OK, gonna fire up today for the very first time and gonna be doing these boys here:

Rubbed with Harry Soo's SYD rub recipe and chilling in the fridge. Will dust a bit more on before I put them on the cooker.

Have some hickory cubes and apple chips. Will soak the apple chips and foil, as I could not find any chunks locally yet.

Will post some pics later when done and let you all know how these came out!

All I have to say right now, after getting these on, is my yard smells frickin amazing!!!

One question, do you all wait until your WSM gets up to temp before you put on your meat, or get it on and then let it come up?
 
Thanks guys! Things are going well. Almost 3 hours in and temp has been 225-235 on the lid the whole time. Actually had to run out for an hour to pick up some kids and came back and was still holding strong.

Will foil these and add some honey and sauce here in a bit and let go for about another hour.

It's killing me not cracking the lid and having a look!!!!
 
Derek , Great choice for the first cook on your new wsm , nothing better than a couple nice slabs of ribs and drink of choice .
 
3 hours in and just foiled, sauced, some honey and a bit of apple juice added to the foil. Back on for about another hour.

Great looking ribs so far. You've got lots of apple orchards down there, go visit one and see if they have some trimmings they will part with.
 
OK, so I had to pull these, as we had to be somewhere. They were cooked, but could have stayed on for a bit more. Maybe about another hour. Were nice and moist but were not yet the nice buttery texture. Still a bit tough to get off the bone. They were fantastic though flavor wise!

Next time, will have some more time to check on them and make sure they are more tender for sure. Thinking some chicken for the next one!
