First cook on the WSM Pork butt

Hey, good luck with the cook!

Being your first cook on your WSM I'd load that ring full to the brim, might even heap it up over.

I just did two 4 1/2 pounders and tried to get away with 1/2 a ring. Yeah lets just say it didn't go over well. Ran out of fuel, butts not done...hungry people turning into an angry mob, you get the picture. Untill you get the feel for your WSM and the way you cook with it far better to err on the side of too much than too little. After all the 'WSM hot squat' is more of an advanced maneuver

What time do you plan on eating? You are looking at 15-18 hours of cooking time if you follow Chris's directions. If "first thing" is 6-7:00am then you will not be serving till pretty late in the evening. You can speed it up by cooking at a higher temp.

It very well could be, but I couldn't tell ya. Found it on the net and thought it looked cool, and it suited my personality. Now its my Avatar

Really 15 - 18 hrs for 1 7lb butt?? I'm no expert infact I am really trying to gauge how long to cook butts for. But in that link Chris has 17 hrs logged for some 25 lbs. I know butts are more of a 'done when it feels done' meat but can 1 butt really take as much time as 4??
 
For butts figure 1.5-2 hrs per lb. If you were cooking 2 butts say one 7lbs and the other 8lbs you would do the math for the 8 pounder. That said butts take me 1.5 hrs per lb in the 235-250 range. So being it's your first cook figure on the 2 hr per lb ratio and all the varriables that might come into play. I'd say 14-16 hrs but be prepared for it to be done sooner, or it could take longer than that.

Are you cooking anything else? I cook for a 7 pound butt. I would throw another one on for leftovers while I was cooking or go through the freezer and experiment with something that was in there. Full ring is safest. You can always shut the vents when done and reclaim the unburnt. I would start at 5am and Plan to eat arounf 6pm I f it is done sooner it will hold it a cooler orwrap in foil then a towel and let it rest in the microwave.
