So after decided to use the enhanced shoulder i gotta tell you it was pretty amazing. I decided to do the high heat method. 3 hours at 350, foiled for 2 more until 195 degrees, and rested for 30 min until 200 degrees.
i then pulled it into a dish, did some initial bbq, then done.
it was moist, full flavor and prob the best item i smoked to date and it was pretty easy.
only changes i would make are the following.
use non enhanced pork and cut the fat cap
