First brisket...

I have had a 5 pound brisket on since 9:30 this morning and the WSM has continually been at 250. I have basted it with apple juice and JD twice now. My main concern is that the brisket has not gotten any higher than 165. I've also been adding water every 1.5-2 hrs. Any ideas or reasons as to why this might be happening? Or do I just need to be more patient?
 
Hang in there, it will start moving up. Search the forums or the website for the word "plateau". Use hot water when you replenish the pan.
 
Thanks. I tried searching but I never used plateau. I figure I still have plenty of time before dinner or late dinner.
 
Cooked brisket yesterday, it hit about 167 and stuck. I thought it would never move. After a couple hours at 167, it took off and made 185 within 30 minutes.
 
Thanks Rick & Doug. My brisket has been at 167 also so I'm just gonna ride it out. It's probably been about 3 hours.
