I have had a 5 pound brisket on since 9:30 this morning and the WSM has continually been at 250. I have basted it with apple juice and JD twice now. My main concern is that the brisket has not gotten any higher than 165. I've also been adding water every 1.5-2 hrs. Any ideas or reasons as to why this might be happening? Or do I just need to be more patient?
