good morning,
did my first turkey breast last night. i used the apple brine from this site. of course the directions were fantastic. i did not use a rub but i did coat the skin with olive oil infused with truffle essence. i really brought out the natural, earthy flavor and smell of the turkey breast. the color was also incredible it had a even light-brown caramel color and a smell to die for. once again, my only complaint was i wish the skin was a little crisper. probably would have happend if i didn't add the olive oil. the breast turned out even juicier than my thanksgiving day bird but with a little less direct flavor in the meat because i did not put any butter or herbs under the skin. anyway, i recommend trying the truffle oil. have a good one.
