I just finished eating the chicken I smoked today. I followed the recipe in the "Low and
Slow" book and it turned out great. The meat was tender and juicy with great flavor. I used natural lump charcoal with hickory wood chunks. Very impressed with how the WSM can hold a consistent temp with very little vent adjustments. Can't wait to smoke again.
 
Awesome, Ryan! Congrats on your first smoke.

I'm trying my third smoke tomorrow. Baby backs was my first, a Super Bowl Chuck was my second.

Tomorrow I'm doing a shoulder, but will be trying chicken soon too.

Good job Ryan. I had My first smoke yesterday, Ribs and chicken.Had some friends over and everyone enjoyed the grub. I am very pleased with how the smoker held a steady temp as it was -6 and snowing here yesterday but it held like a champ
